Steel Cut Oats with Quinoa


I can eat breakfast for lunch and dinner. 🙂 Especially if it involves quinoa, which is an edible seed that is high in protein.   I first fell in love with it while vacationing in Machu Picchu several years ago.  This ingredient is super versatile – think salads, brown rice, and oatmeal.   Trader Joe’s sells frozen steel cut oats with quinoa for $1.99 for a 2 pack.   I recommend jazzing it up with bananas, toasted almonds, and a generous dash of cinnamon.  What is your go-to power breakfast, lunch, or dinner? 😉
