Chicken Veggie Enchiladas

This has become one of my favorite dishes to make for dinner!  I always try to add lots of veggies to everything  – squash, onions, carrots, spinach, zucchini,  black beans, and corn for this meal.  Instead of using a traditional enchilada sauce, I used salsa and it was fabulous!  I layered the pan with purple corn tortillas and topped it with a handful of cheese. And sweet peaches for dessert. I love summer!
